Frozen Steamed Sea Snails In Shell
Whole sea snails still in their shells, each a heavy spiral marked with brown and cream bands and a row of blunt knobs along the shoulder. The flared lip is cream shading to orange, and the dark, glossy meat sits in the opening. They are shown on a cream plate beside a sink, four together on a black tray, and three on a white plate in low sunlight.
The meat is firm and slightly chewy with a sweet, briny finish. Steam or simmer them briefly and serve with a dipping sauce, or warm them through with garlic, chilli and spring onion.
