Fresh-Frozen Sea Urchin In Shell
Sea urchins opened to show the roe, the shells round and covered in fine purple-brown spines, the roe packed inside as bright orange lobes with a fine, grainy surface. Four are arranged together each time: on a slate board over a dark table, on a white plate, and close up where the lobes fill the shell almost to the rim.
The roe is creamy and rich with a clean briny finish. Serve it raw straight from the shell with a little soy or lemon, spoon it over rice, or use it to finish a pasta or omelette.
