Fresh Kelp Noodle Seaweed Salad
Kelp in three cuts: broad dark-green sheets folded over one another, a loose nest of thin kelp noodles, and firm cubes with clean-cut faces. The surface is wet and glossy, shading from olive to near-black where the layers overlap. They are shown on a white plate beside lacquered chopsticks and two small bowls, again heaped on a wooden board, and once more on a cream plate tossed with lengths of spring onion and slices of red chilli.
The sheets keep a slippery, springy bite, the noodles twirl like pasta and the cubes stay firm. All three take on dressings without going soft. Serve chilled as a side dish, toss with vinegar, sesame and chilli, or add the noodles to a cold bowl.
