Fresh Whole Scallops In Shell
Whole scallops in their shells, the fan-shaped shells shading from orange-red to cream with fine radiating ribs. Each holds a plump white adductor muscle ringed by a dark, frilly mantle and a crescent of orange. They are shown heaped on a white plate beside a sink, and again on a plate in a steel kitchen with squeeze bottles and tongs behind.
The meat is firm and sweet, and the shells make their own serving dishes. Steam or grill them whole with garlic and spring onion, or shuck them and sear the muscles quickly in a hot pan.
